The beginning towards a new lifestyle.

Happy Thanksgiving!

I drove home yesterday to spend Thanksgiving with my dad and stepmom. Ugh I hate that drive. Four hours, two of just flat land. However, the clouds were very pretty.

Anyways, I finally got a decent night of sleep! Not having to work until 1am was delightful!

My stepmom was amazing and made me breakfast when I woke up!

It was just the perfect amount to hold me for the Thanksgiving festivities.

We then preceded to watch the Macy’s Thanksgiving Day Parade!

A little bit later, I want to my old middle school’s track and jogged a mile. I hadn’t worked out in a few days so I seemed to be breathing a little harder. I then split each lap with fast walking and sprinting. I couldn’t stay much longer, because I had to head home to make a tart for dinner!

Here’s a little picture of me post-run.

I used a dessert recipe from the undressed skeleton

It turned out delicious! I used coconut flavored greek yogurt instead and mixed some cinnamon in with the whip.

We headed over to my cousin’s for dinner. I couldn’t help but stuff my plate.

I also went back for seconds. (Only for the stuffing and brussels sprouts:D )

I played with my cousin’s little girl for a little bit. We watched the Land Before Time. Did you know they have 11 of them now?! I remember when the first one came out!

A few hours later we feasted again, but the time on dessert.

There were so many options! Of course I tried the pumpkin pie, my tart, and some banana bread.

I was so stuffed! My parents and I headed home and ended the night with a movie.

It was such a delightful night!

I hope everyone else had a wonderful Thanksgiving!

Procrastinating from Studying

I woke up this morning and made myself a delicious shake.

I know it may not look appealing, but it was delicious!

  • 2 cups of leafy greens or spinach
  • 1/2 a banana
  • 1 cup of almond milk or an non-dairy milk
  • 1/3- 1/2 of a raw zucchini
  • 1 scoop of vega energizing chocolate flavor
  • 2 tablespoons of flaxseed

I drank it while I was getting ready of class. The first sip was different, but then I loved it.

When I came back I decided to bake a butternut squash. While it was in the oven, I prepared myself a salad.

It was tasty. I used balsamic vinegar and olive oil for dressing.

After about 40 minutes in the oven, I removed the squash. After, I removed the skin (It took so long!). I couldn’t find any recipes I liked, so I combined so peoples’ ideas.

Most recipes I found recommended adding brown sugar and butter, but I wanted to make this a healthy alternative.

I mashed the butternut squash so it had a creamy consistency. I added 1/4 cup of applesauce, cinnamon, nutmeg, and a dash of pumpkin pie spice.

It ended up tasting pretty good, but still on the bland side.

I’ll have to play with it to find a recipe I like.

Well, I guess I should study!

Pumpkin Pie Protein Shake

I had a great workout today and wasn’t too hungry when I got dinner after it. When I got home I thought I’d use up the rest of my pumpkin puree.

First, I’d like to give credit to Taralynn at undressedskeleten for the original recipe, but I did switch it up a little bit!

My shake included:

  • 1 scoop of Vanilla Protein
  • 1/3 cup pumpkin puree
  • 1 cup Unsweetened Almond Milk
  • 1/2 medium banana
  • 1 packet of Stevia on the Raw
  • 2 tablespoons of Applesauce
  • 1/2 tablespoon of pumpkin pie spice
  • 1/2 tablespoon of cinnamon
  • 2 tablespoons of So Delicious Coconut Milk Pumpkin Spice
  • 3 ice cubes

I used a mixing bullet to blend all the ingredients together. I don’t use too much ice because I love the shake consistency of it. It makes it so much creamier!

I drank it up right away!

Anyways, off to bed!

Catch Up!

Today has been a LONG day. I woke at 4:45am! Yawn! Ate blueberry muffin larabar and some trail mix.

My town has an event called “Tequila Sunrise” every year. It’s held by five or so bars. Once a year, the bars open at 6am, and many people go out and drink. Well, I turned 21 not so long ago, so of course I was going to partake! I’m not much of a drinker, but I did have three drinks. They were delicious!

I didn’t take many photos, so I unfortunately don’t have any to post.

Anyways, I did get my new phone today!

I didn’t work out to today, not surprising, but there’s always tomorrow. I was pretty full from this morning so I snacked on some cottage cheese with bell peppers for lunch.

For dinner I bought myself a kabocha squash. I heard about it on instagram and had to give it a try!

So I looked up a recipe to bake it.

I also wanted to bake some sweet potato fries.

Top left: I had to cut it in half. It was way easier than I was expecting it to be!

Top right: Cut up into small pieces, seasoned with salt, pepper, and olive oil spray.

I placed it in the oven at 400F for 15 minutes.

Bottom left: Flipped them over for another 15 minutes

Bottom Right: Sweet potato and zucchini fries! Seasoned with olive oil, salt, and pepper.

I added a black bean burger patty and made a mini salad. This was a much needed dinner, and absolutely delicious!

I would definitely recommend the kabocha squash! It was really good, but extremely filling. I could barely eat that amount. I have a lot of left overs!

Paleo Challenge

I was on pinterest a few weeks ago and found a Paleo Challenge done by Robin. Yesterday was my two year anniversary with my boyfriend, so I didn’t want to start until today.

Website for challenge:

I’m unable to do all her directions based on my work schedule, but I definitely can stick to a paleo diet.

So you ask, why?

I’ve read that it does help your clean out your body. Do to some minor health conditions I have, restricting dairy and wheat may be beneficial! I feel that limiting processed foods is also a plus. Our world is filled with process foods, and many of us eat them on a regular basis, may even more than we should.

So I would love your guys support!

I’ll let you all know how it goes, the challenges I may face, and other information.

Here was my starting meal!

For lunch I had tuna with avocado and celery topped with sunflower butter and walnuts.

Well off to work!

"I have noticed that when all the lights are on, people tend to talk about what they are doing – their outer lives. Sitting round in candlelight or firelight, people start to talk about how they are feeling – their inner lives. They speak subjectively, they argue less, there are longer pauses. To sit alone without any electric light is curiously creative. I have my best ideas at dawn or at nightfall, but not if I switch on the lights – then I start thinking about projects, deadlines, demands, and the shadows and shapes of the house become objects, not suggestions, things that need to done, not a background to thought."

Fit Personality: 10 Salad Toppings To Try To Avoid! →

Not all salads are created equal. Don’t be thinking your being healthy when you get a salad but then slather it with creamy dressings and processed cheese! That’s ridiculous. That stuff is bad for your digestive system, and if you are going to be working your bend and snap, you don’t want to…
